What is this ??? Minion on Adventurer Plate settings?

Just noticed I had this and thought I did all of the sidequests, would love to know.

Usually in that sort of situation it's something that is part of the list but actually isn't yet possessed (the Orchestrion Roll list for instance does that for any Orchestrion Rolls you don't yet possess), and the clue is how it's stating it's "obtained from Shadowbringers sidequest progression", which can narrow it down a bit to what it actually is, looking on Gamerescape's minion list, I'm liable to think it might be the Great Serpent of Ronka minion, because that's gained during a series of sidequests in ShB (and the specific quest that rewards it has it's own requirements before it can be undertaken).

Failing that, I have no idea.

If my list is matching up with yours, it comes from a special vendor unlocked by a short side quest chain in Il Mheg. The first quest in the chain is one of the aether current quests.

That's vague enough for those who hate spoilers, for those who just want to know:

It's the Giant Beaver minion purchased from the Giant Beaver at Il Mheg (21,36) for one Dancing Wing from Titania EX

You've probably completed the side quests without noticing the vendor that unlocked.
