Hey for starters we usually call them characters, not toons.
Secondly, you can buy the chocobo issuance with your seals at your grand company. Speak with the Quartermaster to buy things including the issuance. It's an item you get that you'll hand over to the Chocobo guy in town who'll give you a good boy to travel with.

You'll be handed a whistle which is an item you use to add the "Company Chocobo" to your mount guide. From there you can summon your mount, plus any other mounts you acquire any time from the mount guide.

Yes, you are absolutely right! I put a lot of time and love into my characters (so far, this is my first). I'll head to Grindania and see if I can progress on this MSQ.
