You're forgetting hairstyles that aren't symmetrical. Those would flip, face marks and scars would flip, and a variety of other things. It would looks sloppy and unfinished at best.

As far as flipping models, there are animations that would be affected, such as characters reaching out to give/accept object to NPCs and such. Basically, the only realistic way I see this happening is if they make a whole new animation set of left handed characters, which as I said, is a pretty big deal.
