Chocobo Racing should give Tomestones

Let's never change anything ever! The trials are always a sidequest! Tanks and Healers have stances! TP is just part of the game - accept it!

Also you forgot bow/gun casttimes, MNK/NIN's stances, and pet jank

In every single other MMO/RPG ever, the horse racing minigame doesn't give you experience or the game's main currency. It gives you currency relating to gambling.
Some MMOs/RPGs have fishing mechanics, and they often give EXP. We have fishing and it's its own job.
There is no logical reason to give people PvE rewards for doing minigames outside of the designated event where that happens since we have said event.
