If none of the above interests you I am not sure why you are playing an mmo. If you enjoy the game for the story then it is a good time to take a break and play other games.Maybe i am asking the question because i didn't find satisfactory answers online.
According to the first reddit post i found, i can do those things:
Savage Raids
Ultimates
Deep Dungeons
PvP
Housing
Triple Triad
Achievements
Mounts
Minions
Hunts
Fishing
The problem is neither of those things interests me.
Probably because i have been playing mmos since 2007. I just recently started to ask myself this question. Since i played them a lot in my youth, they became a part of my gaming routine.
I just need to find something interesting to do in the game, something that doesn't feel like a chore.
Forcing yourself to "find something fun" to do is not a good idea to do anything. It will only make you feel worse. You're playing an MMO. Everything is supposed to feel like a chore. That's what it is. You have a list of daily/weekly chores to do or not do. Ignoring the usual chores just leaves checklists to complete. If you're not interested in the usual chores, and not interested in completing checklists, then you're playing the wrong game.

Spawning S ranks (this is a big rabbit hole).
Conducting hunt trains.
Roleplaying.
Blue Mage stuff.
Mount collecting.
Spending time at the gold saucer.
PvPing (although rare, some people are massively into this as their main content).
Eureka and Bozja
BA and DRS (I've heard some people love this so much they do it regularly for years)
Regardless of how they are now, many of us are probably reflecting on how they were when we played them. Maybe they have changed now! But at least many of the ones I've seen played by YouTubers look tedious and grindy still.
Seriously speaking here: put this game on hiatus until the next expansion and go play other MMORPGs you haven't tried out yet.
One of the mistakes a lot of players make is to believe Game X has to the One And Only Game they play.
I started playing World of Warcraft around the time you started with MMORPGs. That did not prevent me from also playing Rift, Lord of the Rings Online, Wildstar, Archage, Guild Wars II and Final Fantasy XIV: A Realm Reborn while still subscribed to WoW.
The myth of the One True Game is, well, a myth.
