I haven't been able to do Hamlet Defense yet, but I was curious how people go about finding a group. I don't seem to see anyone in uldah shouting for it. Is this something that typically people stay in their LS for?

pick up group happen from time to time, but yes usually they do it with people from ls

The problem is you really need 8 people who all know their tasks properly. Unlike many other events you can't 'carry people' through this as it's reliant on all 8 people performing well to get you 60k+.
Best to start off with a static of people and learn your way, people who expect 60k+ every time and are veterans at this event will most likely leave if you can't achieve this.
Let 'em leave then. If they're so stuck up that they can't A. Help inexperienced people learn the event or B. Be patient enough to let them learn on their own, then screw 'em.

Hamlet is fun if you know what to do. Fortunately it's not complicated. All you need is to find a couple of people who know what they're doing and have them explain and teach you. Sometimes people won't be willing, but there should be some charitable soul willing to help you out.
I completely disagree with Alkimi. It's quite easy to involve players new to the event and not sacrifice points/drop percentages.
Hamlet is casual and pretty easy, i mean, VERY easy, once you know what to do.
Read the thread immediately below this, there's enough info there that you could read it, learn it, and then instruct every player on what to do. So you can easily form your own groups, if you shout in Uldah I bet you get people quickly!

50k is very easy to attain, and 60k is very easy to attain with a top 20 in group. 60k is possible without a top 20 provisioner, but you would need to do just a few extra things for more points.
Hamlet is not difficult but comunication is important.
So doing with LS/static with some kind of voice chat is the best. When we get some outsiders we usually get crafters and tell them to spam attack only.
Also it takes really a lot of dedication to go 9/9 on seal and I find it a little impossible to do if u don't have a static pt or dedicated ls
Hamlet defense is quite possible to do with people who never have done it before. Just the other night, a random group of people with a few who never did Hamlet Defense. No LS/static/voice-chat/'vet'-only going on. We still got over 60k (although we did have a provisioner in the party).
All you need is a basic easy-to-follow strategy, a few tips and suggestions, and the most basic communication (anyone who can type a bit can manage it).
What I need to do is figure out why I keep getting Tank gear when I'm a Mage >.>
My group scores 60k+ in Grid/Uldah almost all the time without a provisioner.
Aleport is being messy with us and we're doing 40-50 most the time.
2 DoL/2 DoH/2 WHM/1 WAR/1 PLD.
All you need to do is:
1-Don't let anybody die.
2-Let Archers kill the 3 special weapon mobs.
3- Kill the none-beastmen animals.
4-/Rally NPCs and /Laugh at boss.
5-Kill Zombie Mage.
6-After Mage dies have the DoLs/DoHs get the full buffs/debuffs up at the same time.
Then kill the boss and you'll get 60k+, its pretty straight forward.
Through out the fight the DoHs should only do Atk up, and DoLs start with Atk down then HP down and do that until the boss pops then alternate between atk down and enmity down until the zombie dies.
Dump your war and get a 3rd DoH and you'll get your 60k. 2 DoH on ATK. 1 on DEF/ENM. Keep ATK up 100% of the time and the mobs will be gone before you know it.
DoLs start with 2 sets of ATK DOWN + POISON, then ATK DOWN all the way until all the 3 special weapons die. This way, you don't risk the chance that a special mob will die to the poison, resulting in a waste of 30 min.
