    Unsyncing Extremes and Savages while working your way up to current content is a really nice way of ramping up to the harder difficulties this game presents. Sure the level 50/60 and so on stuff will be easy, but at least you will be working towards mount rewards (do the last tier of each savage...A8S is a minion instead xD). Once you start hitting the 80s you will start having to look up guides for certain mechs to prog through. This will give you a good feel for how it will be like with just a smaller sample in each fight . As you get closer to current content, the more you will have to learn. Eventually you will be caught up to the current content!

    Then as some have said: Ultimates are UWU -> UCOB/TEA -> DSR -> TOP. So I would consider getting your feet wet with UWU (once you are ready!). It doesn't hurt to fresh prog any of these once you unlock them (for fun), but I would highly suggest not actively pursuing true raid progression until you've caught up and started doing current savages.

    Ultima Weapon is the easiest ultimate, about savage, Alte Roite. If you only want the current tier, then Ps9. Extremes... I can't tell.

    If you are looking to start doing hard content, then current tier Extremes are a good entry point. Zeromus is a pretty straight forward fight, no really hard to learn, then Golbez or Zodiark. Once you are comfortable with extremes, you can try with savage. I would say P9S is the easiest on this tier, but in my opinion, is a big jump from extremes still, so you may require good preparation if you're not used to this type of raids.
