What makes you think the logistics problems that companies face in development have changed in any significant ways since then considering human beings are involved in just about every step of the development process?
Sometimes crap happens. One team getting delayed in progress due to sickness in some of the team members can mean other teams who are dependent on the first team's work fall behind. Severe weather can cause delays due to traffic problems, intermittent power outages, etc.
Unlike American companies that frequently force their employees to priortize work over their families or own health, it doesn't sound like YoshiP is doing that to his team. We're hitting a major holiday period right about the time that 6.55 would normally be coming out. Instead of pushing them to hit a tight deadline before the holidays start, he's giving them a bit of extra time so they can enjoy their holidays.

I've come to the conclusion that the endless debates that cause conflict within MMORPG player communities really have little to do with casual versus hardcore.
The real conflict is between high maintenance players that are very demanding and low maintenance players that are relaxed and willing to compromise as long as they're still having a good time. That's not to say that either one is a bad thing (as long as neither takes things to extremes) but the two sides will have a very hard time seeing eye to eye.
I think the goal is to get the game back on the late June/early July expansion release schedule.
There's a lot more than just Savage raiding in the game.
If all you're going to focus on is Savage, then you're bound to end up running out of things to do quickly. Or are you trying to convince us that the last 4 bosses of Eden kept you busy every week from December 7, 2020 to December 2, 2021?
Is the wait going to be 1-2 months longer this time? It looks that way.
Is complaining about waiting longer going to change anything? No, it's not.
There could be a few things affecting the final release date.
Xbox beta. Increased server congestion due to an influx of Xbox players (if they come) that they need to have a working solution ready to address. The upcoming cloud server testing to see if it would work as a solution. Any number of other things that could be happening behind the scenes at SE that we don't know about but he does thanks to his position on the Board of Directors that they won't let him vacate.
What are you going to do about it if that happens? Continue to pay SE your subscription fees so you can keep making pointless posts in the forums about the delays? They won't speed anything up. The game will be ready when it's ready.
