I picked up tank for the exact same reason you did. I personally don't find it all that fun and I just queue as tank to get shorter queue times.I'm having a crisis of faith and just need a reminder of why I decided to Tank for the DPS and Healers.
For me, I started as a DRG for MSQ and maxed level all of my jobs last year. During the journey I've experienced hardship and pain (mostly due to queue times) but the experience has humbled me somewhat. I figured, LFGs and Duty Finders always seem to have Tank roles in high demand. I experienced suffering, so I do not wish for anyone else to share the same hardships as I had. I queue as a Tank so no one has to wait long queue times and it simply feels good to be helpful.
How about the rest of you Tanks? Why be a Tank?

I find it more fun, engaging and rewarding than DPS.
I do not typically enjoy healer gameplay in anything.
Feels like the role that actually engages with the enemy rather than jiggle left and right whacking the back of its legs for long periods of time.

I'm not. I stopped being a tank when they moved to dps with high HP.
Not fun.

I've never had a single main. From ARR to ShB it was WHM/BRD for me. I had tanks leveled but only used them in FATEs. Now I'm GNB/SGE (and RPR) because I wanted the flexibility of all roles for content.
I enjoy as a tank being responsible for controlling the flow of the fight be that grabbing all the mobs or positioning the boss or preventing it from doing something detrimental to the party. I also get to have the same protective role to the party that I have as healer, just in a different flavor.
I've only done higher level content on tank so far and I enjoy that same responsibility there. It's also pretty fun to watch a boss delete everyone else in that content and you just look at the boss and go "Ooo, do it again".

It's a game, everything you do, you do it for your own enjoyment. Whenever someone claim they do it for someone else, they usually have one of the two following issue:
- They're playing the game wrong.
- They have an ego problem.
From the rest of your post, it seems you are the latter.

I mostly play tank when I feel like it, which is like every other time I run a dungeon.
I'll run dungeons on DPS or Healer, and the tanks I have will annoy me. So then I don't want to see rando tanks, so I will tank until I don't feel like it.

"I thought that my invincible power would hold the world captive, leaving me in a freedom undisturbed. Thus night and day I worked at the chain with huge fires and cruel hard strokes. When at last the work was done and the links were complete and unbreakable, I found that it held me in its grip." - Rabindranath Tagore

I had been waiting since ARR for a gunblade job, so when Gunbreaker released that became my forever main. It just happened to be a tank job, so I adapted. I still play my dps jobs like SMN and BRD pretty regularly though. Some days I just don't feel like tanking.
I agree that Dark Knight is a bit lame but you still have to make meaningful decisions on how much life you're willing to sacrifice. Haven't played it much tho.
Warrior being a disruptor type role is amazing, it's so CC heavy and the stuff you can pull off with Blota or your Limit Break is amazing, particularly on hazard maps.
Gunbreaker is my favorite, especially since draw/junction can be used on teammates now - high skill ceiling and extremely adaptive playstyle.
Paladin's unique Cover interaction is great, it's the true bodyguard and always fun to pull off some clutch saves with, much better in terms of dealing damage than you'd think as well.
Overall I just love Tanks, love how much the design corresponds to job fantasy and how unique and fun they each are. But to be honest the same goes for all the jobs in the game, they all bring something interesting to the table that people fall in love with and even tho I'm personally not the biggest Dragoon or Dark Knight or Scholar fan those Jobs certainly have dedicated mains who absolutely adore them. The 6.1 PvP job reworks were just a massive success and next to the addition of Crystalline Conflict the greatest thing Endwalker has achieved as an expansion.

Tanks are daddy. Healers are mommy. DPS are f***ing unruly toddlers.

Each of the four tank classes has its own awesome mount. A lion, a panther, a warbear, and a tiger. What's not to like? Also, one of my favorite moments in ff14 was surviving an attack in Titan Savage that killed my whole team, the boss had 1% hp left at the time, and thanks to living dead (DRK Invul) I was able to take on the eikon and finish him off. The discord call erupted into cheers and it was pure euphoria.
