Unfortunately it’s random… you should be able to get in the red, blue and yellow pomaces before the plant is done growing though. IIRC it takes all 3 to have a random chance at producing the rainbow variety. I’ve only managed to get one rainbow ever. lol

As Khryseis_Astra says, it's random. You want to use one of each pomace. Then it's a random chance to get the default color (usually red), black, white, or rainbow. It doesn't seem to be weighted toward being more likely to get any one of the four.

It is possible to influence what you would get as the 4th possibility instead of the default color. Fertilize as normal to enable the random result:

Blue Pomace
Red Pomace
Mountain Pomace

Then if you're rather get green instead of red if it doesn't turn out to be black, white or rainbow you would fertilize 2 more times:

Blue Pomace
Mountain Pomace

The next time you click on the flowerpot, you'd get the message that it appears to be growing orange flowers or perhaps flowers of a more unusual color...

I did that when I was growing the flowers for the screenshots so I (hopefully) didn't need to grow the flowers as many times to get them all.

One caution: never use the pomace that matches the current color (even the default). That means most of the time you would want to use Mountain or Blue first since the default color is usually red. There are a few flowers that are yellow by default so then you can start with Blue or Red. If the default color is purple, then you can start with any of them.

Now that I've played a bit with potted flowers, I have more questions. First, is there any item other than the 500 gil single use "vases" I can buy... like being able to place multiple flowers in the same container. Something tells me it's no, but gotta ask.

AND is there ANY way to get rid of the white arrows on top of the flowers? It's really annoying and trying to group different flowers together makes for one ugly scene with all those arrows...

Those 3 vases are currently the only objects we can use to display the flowers. If you want a mixed bouquet, you'll need to stack vases in the same spot.

To get rid of the white arrows (this will affect all interactive furnishings), go to Character Customization - Display Name Settings - NPCs then scroll down to Housing Furniture. I use When Targeted but you can also switch it to Never.
