We eat aether, like Zero did with the apple, and more. The problem of our sides is the "more".
If we were only aether, what the point of bury a corpse (why are there corpses)? Or why did the scions need their bodies back?
We have "a physical soul", this soul need aether and we are able to convert soul in magic, but the body need something else, for example archon bread XD

Non-interchangable types of aether, apparently? Permanent corporeal aether and then "fuel aether" to power it and keep it alive?

We can only go on what the game tells us, and that is that both Krile and G'raha talk about feeling drained and hungry after spellcasting, and then we have Zero demonstrating that there's essentially no practical difference between direct-absorbing aether from a food object and eating it, besides that you get to enjoy the taste of it.
