If I am currently getting one ore (or two if my boon% surpassed) will I now get 2 (or 3 if boon% surpassed)?

Exactly.

For the most part the bonuses do exactly what they say. +1 yield gives you one extra item per gather attempt. +1 gathering attempt give you 5 swings at a node instead of the usual 4, etc.

And the bonuses stack with other buffs. If a node has a bonus of +1 yield and you use King's Yield you'll get 3 items instead of 2.
