That's kinda the point tho isn't it? A good story is often told over many chapters and books.
It's not the games fault that you joined when already 5 books are released and now you read through all of them in one session. While we others had years and years to do that.
But do you want it to end? When I was doing Heavensward, I didn't want it to end.
The only reason to want it to end is if you are in a rush and trying to get to something later in the game (or because you want to move onto another game). In that case, perhaps you are not playing for story but for this other thing that you are rushing towards.
In other news, there is no technical debt from 1.0.

It really depends on if you like the story or not. If you do, then you would not want it to end.
If you don't, then feel free to skip it! Not necessarily by paying. Skipping cutscenes and dialogues already cuts the required amount of time by... a lot.
I mean, the story is not for everyone. If you're actually just chugging through it and not enjoying it at all, totally buy that story skip.
I'll just tell you though FFXIV's endgame isn't something to get solely excited for either.
