Personally I think that if you want to start with something easy, WHM is probably the way to go. It's the most straightforward healer in my opinion.
WHM is the most “straightforward” healers so to speak but if you want to learn higher level healing eventually WHM kinda teaches the wrong habits to learn
It’s also hard because WHM is the only one you get at level 1, I usually suggest people start with SGE but play with it at low levels, don’t jump in right at 70, SGE is better designed around how 14 healers are designed to be played
Easiest Pure Healer: WHM
Easiest Shield healer: SGE
From my experience pure healers are easier than shield healer..
Especially if you're new to the fight and doesn't know the dmg patterns..

Most people recommend White Mage. Especially because its spells have intuitive names such as "Cure", whereas other healers call them other things that may not be obvious to you without reading the tooltip.
The others have just as simple damage rotations (which involves spamming 1 button most of the time), however, they can be more complicated.
- Astrologian has a card system, where they play cards and many people say it has button bloat. Overall, that is not going to make it the easiest one to get into.
- Scholar is a barrier healer and was known as the "technical" healer in the past. Although it's a very good healer, you have to combine different heals to be effective in some cases, position the fairie, manage aetherflow and all of that asks you to know what you're doing.
- Sage is a functional copy of Scholar in most areas, with the biggest differences being no fairie to manage, not sacrificing damage for certain heals, a leap/gap closer, and buffs to its heal potency instead of a few of the regens and heals that Scholar has.
In other news, there is no technical debt from 1.0.

WHM>SGE>>>SCH>>>AST
WHM is the easiest, because if you don't know when party wide damage is incoming you can heal it as you take that damage and regen is your best spell to keep a tank relatively topped up.
AST has more delayed healing skills, also has less dps but has cards to help other dps to dish out more.
SCH works best if you combine multiple skills to help with healing, just don't use them all at once, also helps to know when party wide damage is incoming, in most cases if you notice a boss start casting you generally have enough time to pop a succor.
SGE is by far the easiest shield healer since they are almost instant cast (including Eukrasia recast), has many other damage reduction/barrier skills and also requires you to dps when you have Kardia up on someone.
