Why, some may ask. It's because despite having lower populations, the players in those other MMOs are actually playing the game. This game, not so much. The players are just subbed while doing other things.
Let's also not forget that there's a decent amount of European players on the North American servers. Back when the game first launched, the North American and European servers were both located in Canada. That's since changed, though when the game was still finding its footing a lot of European players decided that they wanted to play on the North American servers so they could be with the 'crowd'. I believe a fair few of my fellow Europeans are still there due to friendships established/houses they do not wish to give up.

MMO's also attract players who do not work/study and those who are retired. To say nothing of people with insomnia or who work nights and thus play during unusual hours to better suit their schedule.

Finally, I'll speak on my own experience on the European servers - both during and outside of prime time I've struggled to form a group for Eureka Orthos and Criterion Dungeons. The content just doesn't have much in the way of staying power and that's precisely why we arguably should have gotten another Eureka/Bozja/Ishgard Reconstruction instead. At least those remained consistently active during their relevant expansions...
