There are so little examples from real enviromental use. Alexander comes to mind, maybe some fight in Omega. And that would be it.

Shinryu is the best example, you climb on their tail and dodge lazers and then later you jump on his back to attack his wings to stop him from casting a mini-enrage.
There is Bismark but people seem to hate the fight
There is Doom/Phantom Train
Usually it is just safer for them to make Square and Circle arenas because people just hate fights that have some downtime so the fight could show some epicness in the fights.
They had more arena variety in Coils, Alex and Omega because they were still testing the waters and they had more creative freedom, in Coils and Alex they felt like actual raids and they used that to make unique arenas and fights. Omega they tried to retain the uniqueness in fights but it was slowly starting to dwindle because they only had 1 room to think up of something and all those fights that had downtime, people hated it which further made room for creativity smaller. which is why some fights feel sorta samey with rehash mechanics with a different coat of paint.

The story is incredibly overrated and is average at best, especially as time has gone on. Also healers are boring to play now and job design is getting worse.
