I think a majority of people posting are doing so because it is a legitimate concern for some individuals that play. Nothing gets changed if nothing is said, although I do not think they ever be able to do 'enough' for some people. I, for one, wont be satisfied until my character can look like Pepsiman.

I'm probably taking a bait here, but Harvestella actually lets you pick non binary pronouns for your character at the start of the game, so of all things, this one actually isn't that crazy far off.
Definitely one way to look at it. I'm sorry that you believe people not posting about them automatically assumes they do not see it as an issue instead of thinking that people might need to feel comfortable doing so to begin with.
It's mostly the realistic viewpoint that having to re-record voiced lines whenever a character mentions you by anything else beyond him or she, is just too much work and not feasible to do with the resources at hand. It'd be nice if they're able to do it, but its also understandable why they would'nt bother at this point in the game's life cycle.
