A game this old with voice acting is not going to add that option, ever. They will not go back and revoice the entire game. I agree that it should be something represented in media going forward, but don't expect it here, would cost too much money.A lot of systems in FF14 are not non-binary friendly. For example, you are forced to be referred to as HE or SHE in the story. Some people prefer to be referred to as they, which is not currently an option. People who are genderfluid may wish to change their pronouns occasionally. Right now that requires paying $10 each time.
Trolling or not, I do understand that there are those that want more representation in media as a whole. The more important thing is to understand the culture associated with the medium and temper expectations accordingly.
I'm all for being who you want to be in a game and for us getting even more options for character customization but as far as representation goes.. Isn't Titania nonbinary? I noticed a catboy in Eulmore that's referred to as "she" as well, so there are little nods to it here and there.
Obviously trolling like always, but I think it might not be possible in the near future at least. They’d probably have to add extra separate heads and body types and I don’t see that happening anytime soon, the best bet for the people who are NB is to pick whichever race they like most and try to customise it as much as possible with only five options per setting.
I think that the Op is in no position to demand anything at all from SE, let them make their game, they can listen to suggestions, but some of the options is going to take ALOT of resources and more to do.

I think we should be able to report all instances of this troll and allow them to single handily fund our content for the game with how many copies they buy to bot farm. Just ban one troll...let them make their first post and then keep the cycle going haha.
