Take your pick between "the axolotl is this expansion's shoebill" and "a poetic reference to delayed ascension as the axolotl is a species that doesn't metamorphose to its intended adult form without specific conditions that don't occur in nature, reflected as a parallel to Athena's ambitions and methods".

did you seriously think they used greek names knowing the mythology instead of just randomly plucking a name from the Odyssey
I think it's just that axolotl remind us the first time we set foot in Elpis (Hermes's pond), the beginning of these ancient time journey.
The development team can opt to put things in places where supporting lore would demand otherwise, even if blatantly stated, because "reasons." So it's better to pretend that the axolotl in question wandered into their domain, mutated, and now has no idea what to do with itself, but luckily you came along to give it purpose.
As an AST, this scenario sure is familiar.

Best I can do is an axowlotl.
The axolotl makes far more sense to me than an owl. As mentioned above, it's this expansion's (much cuter) equivalent to the shoebill, turning up in unexpected places like the edge of the universe.
Owls, on the other hand, might be associated with the Greek goddess Athena, but have not had any hint of being connected to the ancient researcher Athena here, while being more associated to other symbolism here -- Sharlayan's library guards and Ronka's animal guardians, as well as what is presumed to be Thaliak's disguised form in the Omphalos.
