As in…I can pick a colour and make it more or less saturated, lighter or darker kind of thing?????

I don't think anything is changing, it will just show a number for each colour now so if I ask you which eye colour your character is using you can give a number rather than try and explain which row and column.

Correct, It's just showing the actual data values now instead of having to obscurely describe which row & column something is in.
More importantly, it might be indicative of Character Creation changes coming in 7.0, where we might have more control over the values, but that's just speculation.
That's what I'll guess based off that.
