Well, we have a basic idea of what the graphical update will entail. Not how it will end up looking, but the components that will be overhauled. We've seen some mesh updates (at least for the faces and I assume the bodies will follow suit), heard about material rendering updates, texture updates, lighting updates (sorely needed for the overworld), foliage improvements, increased clutter in areas to make them feel lived in, improved shadows, yadda yadda yadda.
I hope they also finally add some proper anti-aliasing because the options we have are harrowing. Oh, and to add more texture randomization for landscapes. A lot of the times, you can see repetition and seams if you look at the ground, and it would be fairly easy for them to fix that.
As for potential customization updates? I doubt those will hit anytime soon; the most we've heard is that YoshiP and his team have discussed it. If it's something they're looking at, though, I hope they start by untying existing customization options from each other. Think au ra horns and faces being connected, or hyur faces and beards being connected; those should all be separately usable. If I want to use au ra face 2 horns with the face 4, let me do that. Same for other facial features like scars. In fact, make scars their entire own category of customization. That's all just the baseline. We could also use just more stuff in general, but separating out the existing options should already be an improvement.
What else... maybe (body) tattoos as a separate customization category? Body scarring? I dunno.
Otherwise, I'd like to see them continue to iterate on Island Sanctuaries. Pull off the bandaid and just add housing 2.0/instanced housing to it. I mean, seriously... just cut the crap. You already have an instanced entire zone (2 in 6.4) for any character that finishes 6.0 that even saves/records trivial changes made to it as well as progression: just add a housing plot to it.
On the other hand, I'd also like more fun activities. The gathering side of it is fine and all, but it doesn't justify the foundational effort put into the islands so far. They could've put those activities anywhere in the world. Give us things that are just more.. fun? Maybe small side-activities like treasure tracking or something on the level of Gold Saucer GATEs. (but less restrictive, I guess) I dunno what, exactly, but I know they can do more with it.
Story-wise, I dunno. No idea what 7.0 will prove to be, but I'm curious to see how/if they can hook people. I for one can't say that just the prospect of Meracydia (undoubtedly covered in Allagan crap) alone intrigues me, if that's what it is. Still, they've proven that they can get me invested time and time again, so I'm happy to wait in that sense.
I would want more character customization options for the existing races, if they aren't adding more they could at least do that.
my wishful hope is that they fix the server tick between mechanics and player movement.
Outside of the visual upgrades which granted we haven't seen their high res textures on the world or creatures with the physical based renderer yet (only saw it on characters) I am more interested in them talking about a bigger allocation towards animation as a whole which they said longer emotes but this could also extend into more in depth emotes that can make the MSQ which is dependent on them a good boost of variety.
I would like them to rework the level and fate system and personally make it take much longer to level crafter/gatherers. Having your 100 levels made levelling a cake walk and they honestly should rework it or make it much more of a harder choice to expend a leve on this X job rather than Y job.
Outlandish expectation....make the original 3 cities seamless :P It would be really really nice for them to make them a seamless experience.
This is more an overall hope for the future. I doubt 7.0 will bring anything like it, but I hope they start to consider more free movement. I get that some limitations exist and most likely will forever, but some spots on a map are just boxed off for no reason, and it makes the game feel less immersive than it could. Some stuff is just cordoned off for what feels like "Well, what if someone can fall down?" or "What if someone loses the way or gets a little stuck" reasons, and it just makes me kind of roll my eyes. Let people fall into pits, let people climb up mountains, let people run all the way around the interior of the Pendants, etc. Additionally: let more settlements and houses have interiors. There's so many of them that are just singular objects with locked doors, but then there is one that is entirely modeled from the inside: just copy that interior and shuffle some stuff around. It will make the world feel a lot more lived in, even if it seems minor.
On a similar note, and this is a super vain hope, but whatever, this is a hopes thread: consider one day stitching more zones together and phasing out loading screens. In the major cities, in all of the Black Shroud/Thanalan/La Noscea, in and out cities, etc. I know they can't possibly stitch every ARR zone together and allow is to fly all around it like it's one world, but they could at least combine the various locales and fill up the sides/between so it feels like it's all part of the same space.

Magitek Garlean job class!
Also Chemist as a healer and Chrono Trigger crossover alliance raid.
Female Hrothgar turn out really cool and the graphical update fixes all of Viera and Hrothgar's glamour problems.
