I also have a learning disability & although everyone is different, I've tried every class
Currently I am playing MONK & I practice my rotation everyday
I watch as many guides & look at the balance discord & talk to the people who seem the most patient & able to break stuff down to a baby level
For over a week, it felt like I was trying to learn an entirely different language & play something outside of my ability set
I often step outside of my comfort zone to test what I can- often people lose their patience with me because I am the "bash head against wall" type.
Regardless of any steps I took to prepare myself beforehand

today things finally clicked with MONK
I'm still getting used to it but I actually felt progress

I'd say start with Dancer or Summoner for sure
Black Mage even has a nice build up & is very simple - literally just remember to keep thunder dot up. When thunder dot (damage over time) gets low, reapply it
With Dancer, apply speed before pull. Don't forget dance partner for buff
Summoner has a very 1, 2, 3 skillset & is great for beginners & folks who are trying to get into something imo

MONK is literally- 1 skill gives dps buff. 1 skill gives a Dot. Use those 2 then use other skills & only apply dps & dot buff when they near run out.

Just always, always study & practice.
