The difficulty level isn't any different to a standard dungeon, just with slightly different mechanisms, and there was much (and largely positive) discussion of it when it came out. That indicates to me that a lot of people were doing it.
Are you confusing it with the "criterion dungeon" extra-hard boss rush?
I said "perhaps", but there isn't really any other logical way to unlock such a thing, when the dungeon is all tied up in the separate quest for the variant dungeon itself. This hypothetical thing would be like a shadow of that dungeon experience, reconfigured for the standard roulette, but you can't go over the quests a second time.
It wouldn't be a huge imposition to expect people to complete it once to unlock the roulette version. No different in the end to setting an optional standard dungeon.

I think it's pretty okay to assume that most have stepped into variants at least once. You'd be correct when it comes to the majority has never fully *completed* all 12 paths though. Silky mount is sitting somewhere around 21% of the game population that acquired it.
