Dungeons could definitely stand to be a little bit harder... They don't need to be roadblocks or anything, but Alzadaal's Legacy gave us basically a punching bag as a boss to fight.

For other "Normal" content, Alliance Raids have kind of been kind of a joke in terms of difficulty for both Shadowbringers and Endwalker.
But they won't get any harder because apparently the devs consider Orbonne Moastery so impossibly hard that it's the only Alliance Raid with an Echo buff...
