I wouldn't say it's quite on gordias level. More like midas with the weird puzzles.
Last fight Def isn't on ultimate levels. It's more annoying yes, but I've cleared p8s, I haven't cleared any ultimates.
? P5S - P7S are on the easier side (P5S is arguably the hardest of the three, and I don't think it's any harder than E9S or E5S. Literally nothing happens during most of P6S and P7S).
Only P8S is kinda tough, but that was mostly because of the dps check, and only P1's mechanics. It's not anywhere close to Ultimate difficulty.

P8S P1 IS the ultimate part. Deaths are pretty much not allowed most of the time because it'll result in somebody else dying. Therein lies the ultimate part. P2 is really easy in comparison and definitely my favorite fight this tier, but getting there is such a horrible slog that it isn't funny. I've had nights where even with the normal static, getting past P1 is such a pain and draining effort (only get leg first, never arm...) with no mistakes allowed that it feels like you're beating your head against an ultimate.? Sadly, many people love FFXIV despite the raids, not because of them. Endwalker has 24 hours of cutscenes and an equal time of walking for two hours of actual gameplay. And many people LOVE this. The less gameplay, the more people rush to FFXIV’s defense.
And after you beat the story? That’s when you go clubbing with your friends while trying on your brand new mods that you can now share with Mare. So why even worry about raiding? Just do /beesknees and alt-tab to a better game! That’s the FFXIV way!

As someone that used to raid, I do feel the rest of the content outside of that tier is easy. However, it makes it accessible to more players. Just have an understanding that if you aren't raiding, it is "easy mode." If I want a challenge, I'll spend time somewhere else. I do still find enjoyable aspects of FFXIV, so I stay subbed to do some of that content at times.
There isn't much between MSQ/story mode and Ex/Savage. Maybe Criterion fit that bill? I don't know.

The funny thing is, it doesn't look like they participate in any of the more difficult content the game offers. I think they are just advertising that they spend their in game time going to clubs.. Which good for them I guess?
And this is why FFXIV will remain as-is, probably will get worse, and OP will likely just get more and more frustrated. More people will simply defend whatever they get because FFXIV is beyond criticism. Raiders are a small minority that’s ever-shrinking thanks to the drought. The post-Endwalker decline of our gameplay-centric MMO has been met with applause and acclaim. You might not find a problem with this, and that’s okay! Raiders will find a better game to play, and you’ll still be able to pay $13 a month for…whatever this is. Rest assured, business will continue as usual, for better or for worse.
