I do the adventure content up to Savage. I would do Savage because I used to do challenging raids in other MMOs but I just don't like schedules. Since it's become more puggable, I've given it the side eye lately. It would take some considerable effort to prepare to enter that level of content and I've had other things I could do. Maybe when I'm out of the other stuff. Likewise I don't do Ultimate. I haven't been worrying about EX when they're current this expansion but I do enjoy that from time to time.
I enjoy beast tribe quests. I like doing treasure maps with my friends. I love doing relics and I've been working on finishing off the last of the Zodiacs and Animas I don't have. I'm max in DoH and DoL. I've suffered through most of Eureka and Bozja but they're not my favorite content. I do every side quest I can get my hands on from the random ones in the areas to questlines like Hildibrand. I'm a fiend for Triple Triad. Sometimes I like to go achievement hunting. I poke around at the sightseeing log when I feel the urge.
I finally leveled BLU and found out how fun Masked Carnivale is. I haven't done the synced challenge log stuff yet.
I've never done PvP but there's a TT card there now so it's only a matter of time.
I have alts, including one I've been working up on Mari and enjoying the story fresh again. I started her from scratch without any help from my main to see how far I could get on her own.
I've played for going on 9 years now and I still find plenty to do. I try to cast a wide net. Sometimes it's content the game has just dropped. Sometimes it's goals I set for myself between patches. But I'm still enjoying the game. I wouldn't be playing otherwise.

I am a bit strange that even though I do love the lore, there are still many quests I need to do! I think that subconsciously I put some things I enjoy off, due to not wanting to get to a situation where I am lost for anything to do. Like, the majority of non +! side quests I have yet to play. I completed Stormblood a good year and a half/two years ago I think? And only just did the Four Lords questline (Was not overly keen on it so its been in my Journal for a long time haha) Same for the The Sorrow of Werlyt questline… although unlike Lord, I really regret not doing that one earlier because it now ranks as one of my all-time favourite story quests in the game. Oh and whilst I am only five levels away from having every DPS class at 90… I have still yet to unlock BLU haha.
I am actually playing an alt now, and I play to do all the normal side quests as I go along and things like Lords/Sorrow more in-line with where I am in the MSQ this time.
PVP I rarely do, it is a mode that just rarely interests me outside of the odd Glam I wanna pick up. I should play more for the ‘battle pass’ stuff but yeah… I enjoy the Gathering classes, Fisher was cool but I enjoyed getting level 90 Botanist in particular. Will get around the Miner one day. Crafting I find a bit too intimidating, so have only got CUL to like level 45 now. My main motivation in that is so I can do the Tribe Quests for minions and mounts.
I've put a lot of time into the side content over the years, and it used to keep me busy while friends were taking a break and we weren't raiding, but I gave up on most of the 'casual content' this expansion.
I have 7 alts (5 at 90) and I've decorated about half of their apartments and FC rooms
I have 5 omni-crafters and gatherers (all 90 but I barely craft these days, mainly I make furniture for my housing)
I got the skysteel tools for my gatherers and some of crafting tools but they were obsolete before I finished all and I was running out of bag space
I have all battle classes to 50 or above on my main
I did the HW sightseeing log pre-nerfs and finally got SB when some kind person helped me get the lamppost after Kugane Tower (the struggle I had to get up that tower was enough to make me leave sightseeing alone after that, though).
I do have all the shared fates done for ShB and EW (I collect music rolls)
Things I've started and given up on include:
Fishing log - gave up when they added all the Ocean Fish to it
TT - gave up after grinding hard in SB and then realizing just how hard it would be to get all the cards
Verminion - I did it occasionally for MGP, but I can't remember the last time I bothered
Relics while current - I usually drop out of these on the final grind when I start feeling life's too short and it's going to be glam in a month or two anyway
Blue mage - couldn't find people to do the group content with
Deep dungeon - groups just keep falling apart
Things I haven't started:
Mahjong - I hear it's really time-consuming and I've never played before
Side quests - What's the point?
HW relics - Just hearing friends doing these was enough to put me off
Expert crafts - Sounds like a horrendous grind for not much reward, don't see the point
So there's plenty left for me to do, but there isn't much I want to do.
I've recently taken the advice to try other games and it's been a lot more fun than forcing myself to do stuff here.

The idea that there is a content drought or that there has ever been a content drought is a lie created by toxic players who want something to be angry about. These players do not represent the community. Only a handful of players have truly completed the game. They are the minority and if they complained about it then they would be elitists for doing so. The amount of content released within each patch is perfectly fine. The angry minority needs to stop complaining about issues that do not exist. Stop, slow down and enjoy the game as it is like the many other players out there. This game's goals are not to enslave you and force you to grind forever. The Square Enix developers are kind enough to create engaging content while keeping that content within reach for the majority of the playerbase. Take advantage of that kindness and be grateful for it.
Been playing this game since launch. Do I have content I haven't done? Absolutely. Is it content I got any interest in doing? Absolutely not.
Island Sanctuary -> Did the first part of it before they updated it recently and got zero interest in going back to do more of it. It's just not fun.
New Deep Dungeon -> Tried it a few times, but I got every job I really like already leveled to 90 and anything else I don't have leveled is that way for one reason or another. Crystaline Conflict ended up being a more rewarding and fun leveling system for alt jobs than the Deep Dungeon.
Criterion / Variant dungeons -> I sometimes do one. They exist. I don't know what they are other than another dungeon that has a few cosmetic items linked to it and that is it. Barely played them and probably wont complete them unless I get into some mount collecting mindset again.

Maps (Sometimes. It's kind of time consuming but an easy way to fund doing savage...)
Beast Tribes (All are done now so I'm not really doing anymore of them. They are kind of grindy and only worth it the first time around or when leveling. Even then, PvP is better for leveling)
Crystaline Conflict (Only the seasons with the rank 25 armor)
90% of my time is getting eaten by savage and map runs and I really don't get the point of making savage so time consuming. I don't see a point in having it other than to trickle a bit of money during content draughts when people would typically unsub, but I'm paying by 3 month segment. I didn't find I saved much because there weren't too many points I would unsub for a month and there are enough things to do outside of savage that they really do not need to rely on groundhog day death fiestas like other games. At least, I'd have reasons to do the other content they are releasing.
And also I'm going to add that endwalker is basically Grind Walker. The three big things to do are PvP, EX mount farming, and Savage / Ultimate. Shadowbringers was "Grind Bringers", but they did a better job integrating less taxing things into a grind than they did on this expansion. Namely, they had a casual grind that people could do for the relic weapons that tapped into alternative content instead of the roulette.
I love Roulette, don't get me wrong, but they stacked sooooooo much on roulette this expansion. We have the crafting mats needing comedy, the relic weapons needing comedy, the items to upgrade crafted gear using comedy, and while that may not sound like a lot, selling comedy for gil to buy tinctures and food is a common way that people who raid keep themselves afloat, and it gets really tedious doing roulette thrice over for relics on top of it all.
