In terms of actual instances, I haven't finished any of the ultimates or criterion normal/savage.
Aside from that, it's pretty much miscellaneous achievements to grind including some challenges like the BLU stuff and PotD/HoH solos.

I have done all the content I want to complete, thus why I am focusing on other games. I would say I am currently interested in about ~10% of the games content. I used to be interested in PvP but my unpopular opinion is that I prefer the old system. Combat has become boring and repetitive to me so I pretty much stop doing any gameplay things after I complete the MSQ stuff for a patch. As for people mocking you for doing side content, I find that really strange that people would care that you are doing other things in the game but I guess it's cause I have never seen it.
Is getting Large Shirogane counts as achievement?
(I miss my Roegadyn flexing view tho...)
After 6.0 the content is just getting old with the same stuff. I’m just in it for the story. Only logged in for the house at this point. Once I can get rid of the house I’ll probably only come back for expansions.
I cleared the stuff that I wanted to. I'm back a little bit more after a recent hiatus but still burned out on the content design and reward structure. It has survived almost unchanged for a decade.
Island Sanctuary was Endwalker's biggest new idea but it bombed hard. You can't spend any significant time there because it's not fun. It just ended up being a mostly automated grind with timegated rewards, so the value it added to the game is minimal. Lack of gameplay doesn't make it relaxing.
Now expansions have spread to longer than 2 years apart so it will be a while before we find out if 7.X has a better gimmick. Fan Fest at the Tokyo Dome is in January 2024 so version 7.0 has to be somewhere after that.

Everything in terms of ARR (not so much fate achievements and the like, but all possible content available at the time).
I took a year off just before HW launch and came back just before Creator was released so I pretty much got to skip all that disaster in terms of raids but since it was so late into the expansion, I didn't want to try and find a static for Creator and thus pretty much missed the entire savage raid of Alexander. I did complete all the Extremes though.
I completed the 1st 2 savage tiers of Omega before my static broke up and thus never got to clear the final tier. I noped out of Eureka and never bothered with it until I had to grind out my TT card collection that required me to complete at least the 1st 3 zones to unlock the NPCs for cards and that's as far as I'm ever going with it. Again, all Extremes done. My static before breaking up did attempt UCoB but never got to complete it.
By ShB, I was kind of burnt out on Raiding. I completed the 1st tier but that was kind of the end for me in terms of raiding. Still did all the extremes for the TT cards though and I did complete Bozja/Zadnor because I tolerated it more than Eureka since I felt Lost Actions really made the content more enjoyable overall.
For EW, just because of my disappointment with the game at this point, I'm barely even playing anymore. I "quit" in 6.1 and only came back to try out the PLD rework as well as Criterion Dungeons/Island Sanctuary to see if they'll rekindle any spark in me but sadly they did not. Now I'm just waiting for my sub to lapse and try out 7.0 to see if anything gets better in terms of gameplay.
I did pop in PF a few times to try other Savage fights here and there when the mood struck me but those became less and less frequent over time.
Essentially, my drive to continue playing died with healer gameplay.

I have about 3,000 hours in game and am still a long way from seeing everything I want to see. Some of that "want to do" is grindy repetitive stuff that I still enjoy like achievements and relic weapon glams, others is entire segments of content. I like seeing my achievements go up, sue me.
I haven't really touched the Blue Carnivale or raid achievements. Have never done Savage and only a few Extremes. Have only done barest amount of Deep Dungeons. Have barely unlocked the Diadem rewards or 6.X's crafting loop. Have still hardly gotten into Criterion & variant dungeons. Still want to do a lot more PVP on other classes and have never yet had a chance to do Rival Wings. Still haven't finished my TT card collection. Haven't even started my Gwiber farm. Need to go back and level up all my Trusts so I can see their input in dungeons. Haven't even touched my ARR sightseeing log. Still haven't done the Kugane tower puzzle. Still want to learn how to play Mahjong. Have never joined an RP group. Am currently also re-running MSQ on an alt to see the story again when I have spare time from my main.
Have I seen a lot of content? Yeah sure, but even content I have nominally "done" like Eureka and Bozja still have a lot of time left in them because I enjoy the grindy side of it (like completing Bozja records for achieves or doing Eureka for relics). Grinding is not for everyone but it is part of the MMO genre which I feel you're kinda able to read on the outside of the packet when you buy into this genre. Most MMOs are far more grindy than FF14.
Is it rational to say "the two things I like doing have a content drought so I am going on break until they update"? Absolutely. Is it rational that different people don't enjoy ALL the content available? Absolutely. Is it rational to demand your two favourite things have infinite content? No, that person is a lunatic.
I still have thousands of hours of things left to do to keep me happy.
I don't know. Depends on what you consider "complete". Do I need to complete a relic questline, or do I need to get a relic weapon for every job, every expansion? Do I need to complete the NM raids, or do I need to complete the savage versions as well? Do I have to level all jobs to max, or at least one job from each role? Do I need to catch every fish, win all the TT cards, wipe every single icon off of every map, visit every vista, and take a screenshot of all the stones of the Twelve when they are lit up?
Answers to these questions determines if I've completed 50-80% of the game, or like 10% of it. I didn't even mention crafting, PvP, Eureka, Bozja, paintings, housing, EX trials, diadem, deep dungeons, hunts, FATEs, the gold saucer, etc. etc. etc. etc. etc.

ARR: Nope. Will not put myself through that depressing grind.

All savage from ARR->Endwalker, Have not finished P8S.
Trials:
All Extremes finished upto date.
Minions and Mounts i couldn't care less about, you just get them eventually.
Island Sanctuary 12/12 levels and all rewards bought.
Triple Triad: Work in progress, some of these cards are a nightmare! (Finally got E12 card.. after 200+ runs)....
Most of the other gold saucer content i don't really care about.
Working on map titles over time, not something i can really sit down and grind away at constantly.
