What the stat that affect melding?

There isn't a stat for melding.

The rate on melding is based on the tier of the materia, the stat on that particular materia, the order it is melded in and whether the item is +1 or not.

none at all~

Just make sure you do the lower stat materia first when you double meld, it'll significantly give you better chance of a double meld as opposed to going highest to lowest.

Nothing to do with your level as far as I can tell.
The only thing your actual level has to do with melding is whether or not you can meld a particular piece of gear in the first place.

The stat is called Probablity. It's increased by raising your characters "Luck" attribute.

So let's say I got myself a level 18 Goldsmith, just high enough to enable myself to meld, theoretically I can now meld any piece of materia to any level of Goldsmith type items? Or is there more involved? Sorry new to crafting, this was here and I was curious. ^^;

If you examine a piece of gear it'll say repair goldsmith (Level 10~) or something like that, I can't remember lol
But by that it'll say Melding- then it'll show the level required and the class to meld it.

level 0-30 gear - tier I materia can be melded
level 31-40 Tier II materia can be melded
Level 41-50 Tier III & IV materias can be melded

Edit: Please note that some gear can not be melded with materia
