Thats not how it works. As there are more indirect factors that matter a lot.

Lots of crafters also gather, if crystals can be gathered faster, it makes more crafters just gather. Removing sale opportunities
When there are more crystals, players will be stacked with enough of them faster, again removing sale opportunities.
When people arent getting any sales, they often reduce the price, but with a severe overproduction, the prices will drop to 1gil, killing the market.

As a side effect to counter this, crafting recipes would then demand more crystals. But this has the downside that this higher demand will kill the 9999 stack limit in usefulness at some point. Being forced to spend 30 crystals per craft will drain this fast enough and make it anoying.

We already are getting the special gathering options that we need to reduce to get the special vials besides crystals. These are again a method for getting a boost in crystals, and will especialy for gatherers save time. But we just need more of these to realy be able to obtain all crystal types. And while the boost is small, market wise its noticed enough and scales well with demand.
