If you actually paid attention in the quests, then you would know he's a sheep farmer because he wants to be.

Anden is a chad:
+gets the favor of the Il Mheg pixie which is actually hard and most of the time you might as well be dead
+gets to meet Ardbert and his buddies which is a huge win for people that love him
+improves the lives of many thanks to the sheep, providing food, clothing and such
+is grateful to the pixie for surviving the Flood and picks his passion for sheep over the vieras
+still cares about his tribe regardless
+I love sheeps
