This is a matter of development time and priorities. Having a basic animation across all crafting classes that really just switches out the tool just saves them time. I can understand that, and have brought it up on many occasions. However, if they wanted to make the crafting classes look and feel less homogenous this is absolutely something they could look into.
EQ2 made the move to summoned stations a while back. I know what they look like and I feel like we don't need that in this game with the amount of crafters that are out there regularly. It would become another effect people will want to hide. I like being able to go anywhere to craft whatever and not have this big table or forge in front of me looking so out of place. What we have right now fits.

Are we really going to talk about these like the adventure classes and throw around words like homogenous? They don't all have the same basic animations as you claim (except for the irrelevant battle / victory stance). I don't feel like they're worth the time to stand apart any further than they already do. What would be worth the time is to allow gposing with these actions.
