Yeah, I agree. I'm very underwhelmed by the quests, but I realize that it's only a first step. Yoshi-P said in his notes that they're going for more frequent updates with less content per update, than less frequent updates with more content. I prefer this way as well.

The quests are crap now, but it's just like a placeholder and a base for more content to be built up from. They'll get better with more updates.

Personally, I'd like to see better rewards fro quest completion, and more varieties in quest objectives. Fetch quests are so blase.

I'd also like to see SP rewards or gil rewards, instead of/in addition to item rewards that I have no use for. Alternative rewards like increased inventory space, increased accessory slot points, increased maximum TP, additional favorite locations, additional anima, extra retainers, etc would also be very welcome.
