If you want to have a healing challenge that is not Ultimate, I'd say... try PF healing. I've been doing it and is really hard to perform even reclears at an optimized level.Tanking and healing are very much fight dependent. Tanks see fewer opportunities to actually shine because fights are no longer designed around you positioning and maneuvering bosses around the arena. As a result you end up playing a simplified melee dps with less carry potential. You can't even say that fights offer interesting opportunities to mitigate because of how infrequent and predictable damage output is. And most melee jobs give you a personal shield and raidwide mitigation tool so you won't really miss much by swapping off. You're better off leaving the tank role slots for weaker members of your team.
Likewise, healing can briefly shine in progression but inevitably drops off quickly as people actually learn mechanics. Their impact becomes even less relevant once you've cleared because fights are very scripted. And even in the event that you want to recover from a catastrophic mistake, the thing that allows your healer to get away with pressing the LB3 button is just having an excess of dps that allows you to still make the check despite slip ups. You're better off just playing a dps job and creating that opportunity up for the rest of your team. I think the only reason why you still have have skilled players in the role is because there's simply less competition to become good. Half the healer playerbase can't decide whether they should be doing damage at all in the first place, so it's much easier to play pretend caster and outperform an assortment of Sylphie mains than it is to actually play a caster and outperform people who are trying to excel in terms of dps. Big fish, small pond.
Either way, if you've been observing fight design for a few expansions now, you'd know that dps is where the carry potential, gear, and accolades is at. If you were any good at tanking or healing historically, it's such an obvious switch.
I don't know the answer to this. I don't play too often and am a bad player so I play Dancer. It is stupid easy.

wait, wut? xD... you do know, this is us the hardest since HW (mechanically harder than HW).., DRS is the hardest Ultimate & 2nd EW savage probably the hardest savage ever? (HW was gated & had clunky classes, its mechanics seem EW extreme trials)
