You get an actual 'victory' emote that has a unique animation for each Job/class late in HW's patch storyline (you also get a 'battle stance' emote that is like a challenge for starting the battle at the same time).
And some dungeons/trials the 'victory' aspect is changed reflecting the situation of the time (
Wanderer's Palace HM has the WoL about to do the /joy emote, only to start grimacing when the tonberries rush in and.... 'finish' off the boss off-screen; and starting from SHB's story dungeons the WoL just grimaces and closes their eyes wearily, symbolic of just how.. tired they are and the increasingly darkening aspect of the story, and that continued into EW, as the world goes to hell and they're more and more dragged down by despair. After EW's initial main story is completed though they're back to doing the '/joy' emote referencing their newfound hope for the future, although Troia ends with a simple smile and nod as if to say "Right, that's done!").
Either way you get a proper victory emote as part of the story in HW, so keep playing! (Also, funny you should mention the FFXII version of the Victory Fanfare, that actually appears during the Ivalice raids in SB, but you have a way to go before then).
