Specifically a new DC. Just want to have a general check list and idea of if there's anything I should be doing really.

Depends on what your goal is.
Make gil? Housing? Establish an FC?
Probably clear out any apartments/FC rooms you may have.
Might be a little late to invest in the currency items (if needed). I wonder if a lot of those were bought out recently. I have not checked.
Change my mind and stay on balmung forever. Till they give me a house when I move.
Commendations.
If I play dps I only give it out to other dps.
If I play tank I only give it out to healers.
If I play healer I only give it out to tank.
Only if they should be getting a commendation.
There are always exceptions to the rules!
Main list of things to do to prepare can be found here:

The big one that most people are probably going to forget is that you need to visit the character selection screen for the world you intend to transfer to before you start the transfer process on Mogstation. Otherwise the world won't appear on the selection list.
I'd suggest that you stock up on anything you use on a regular basis if you have inventory space to spare. Going to take a little while for the marketboards to fill in and while data center travel is available, it also gets annoying after a while.

as you want to transfer to a new datacenter, grab an appartment if you don't have one, you'll get refunded the full price for the apartment + an additional 500k if you transfer to a preferred world (which the new ones will be). also make absolutely sure NOT to relinquish your personal housing in any way shape or form if you currently have a house. the website tells you you have to do so but thats just not true (and yes i'm sure on that, actually transferred to the new european datacenter when it came out) when its a free transfer to a preferred world, again for refund reasons.
gil transfer for preferred worlds is actually unlimited (or at least set on the personal gil cap, not sure for retainer gil but i doubt this will affect you) so you won't need to turn your money into currency items.
that aside, maybe try stocking up on some raid consumables if needed, and grab all the housing stuff you know you want and can afford and stuff like that, chances are the economy on a new datacenter will screw you over heavily compared to an established one so turning some of your money into stuff you plan on grabbing anyways early one could be a good idea. yea, datacenter travel is a thing and all, but lets be real, its cumbersome so chances are prices on the new datacenter will take some time to adjust (even when they added new servers to the european datacenters it took a good 3 months for prices to somewhat stabilize, and hopping servers is quite a bit less convulated than datacenter traveling)
One thing that tripped up a ton of people going to materia is that you have to go to the guy that holds all your old belts that were autoremoved from your inventory and delete them all.
