I'm on a similar boat as you. I have arthritis and had a stroke too(the difference is that I'm on my early 20's ). You might like Reaper if you're looking for melees, its pretty OK. RDM, while its my main class, its considerably more difficult than SMN and has more buttons, but maybe give it a try too.
There's some addons that might help you too, but unfortunately I can't tell you anything about that.
