I watched the video so you guys don't have to. It's a 44 second pointless video.
Island sanctuary is just a cheap version of farmville that got scrapped 2 days into development.
Infact i think farmville cared more about my time than the developers of IS.
Farmville was an entire game built around that specific content. Island Sanctuary is just side content within a larger game. Of course it's not going to be as fully featured.
If you're really looking for Farmville, then play both games. You don't do yourself any favors by sticking only to a single game and expecting that one game to fulfill all your gaming needs.
I also laugh at the idea that IS doesn't respect your time when once you've got everything built, it's only a few minutes a day to maintain it while generating cowries for vanity rewards.

For example, I think that as a game ages it isn't unfair to expect it to do more to actually be ground-breaking on some fronts. In its golden era, World of Warcraft would look at what competitors were doing, take what worked and refine them with an attempt at a twist.
I see very little of that here in FFXIV. As a veteran player, I'd certainly appreciate more to do in-game that has staying power and which boasts more depth than just clicking on nodes/waiting around. It certainly doesn't help seeing the content I do enjoy - such as Bozja - artificially cut short and scrapped.
I daresay at this point the game has become something entirely different to what it set out to be.

Bozja was the unfortunate victim of covid. Call it an excuse all you want, but it impacted so much. I would've liked to see more from Bozja as well, but there's only so much that can be done. XIV has taken plenty of cues from other games and made improvements to the MMO experience. That can be hard to see if your experience is limited. All WoW ever did from the start was appeal to the lowest common denominator and make the game super easy to run, where others forced you to upgrade your PC every so often. They didn't even have a whole lot of competition back then. It was just the EQs and they're still going. They haven't done anything terribly ground-breaking either, though EQ2 finally runs on 64 bit. With MMOs, it's more about consistent delivery.
Of course this game is different from what it set out to be. It had to be taken offline and get redone.
Ehh I don't know how much I buy this excuse.
Relic content has been getting put off more and more with each expansion. Back in the ARR and HW days it was an expansion-long thing and that's the way it was supposed to be for SB too but the devs weren't able to finish Anemos in time for 4.1 so it was delayed - you can even hear Eureka music in the trailer for that patch.
With Shadowbringers for whatever reason the X.2 release date became expected, even though there was no reason to believe this should be the case just because SB had to delay its own relic, but then turns out ShB couldn't even get its first step out in time for 5.2 so we'd have to wait until 5.3 for the real first step of the relic while giving us an half-assed base step to start with.
So we went from the initial 5 zones that were promised down to 4 in Eureka, which then got cut down to 2 in Bozja - which even if there was no covid it would still have been one less area than previously.
And I don't even wanna know what these supposed Manderville weapon quests are gonna look like, I doubt it'll be anything on par with Eureka or Bozja (despite me not even liking that kind of open-instance content that much).
Exactly really some peoples expectations are a bit much. The content is fun, it's relaxing and there are a lot of nice rewards associated with it It's not going to be better than Animal Crossing. The content is going to get updates and it remains to be seen what that will be. Hopefully it's not more of the same but expanded to do more we will see.
A lot of time and effort went into this content which as you say is only side content which is not the main purview of 14. Will it make everyone happy, certainly not, but that's not just Island but many things in this game. Different strokes for different folks.
I have 6 Islands up and running and I'm enjoying it personally quite a bit.
