And I don't understand why people are so willing to believe the devs are lying instead.

Because 1) SE has lied to us in the past, and 2) When SE's response is essentially "Our testing team is just too good to accurately represent our idiot playerbase so we'll nerf it for you plebs", it's easy to assume that they're willing to lie to us as well.
