Like Warrior. But not tank. I get that with the fancy classes, the devs have an easier time designing spell effects and stuff like that but...cmon.

Beastmaster doesn't need to be a pet class, they could use a gaunlet that lets them focus on animal aspects/spirits to charge their skills. Bear, wolf, gorilla, elephant, vulture, or you can use ffxiv variants like Coeurl, Hoarhound, Griffin, and Adamantoise. You got a ton of stuff to use.

Vikings could do dual axes or hammers, and use lightning and ice powers. Maybe copy the red mage, a bit but instead of melee/ranged swapping they just go ham and combine ice and lighting when a bar gets full.

Need a caster? Necromancer. Pretty self explanatory. Doesn't NEED to summon undead even though when you think necromancer, you think undead summoning. Could use bone magic(diablo 2) or decay magic.

Ranger/Hunter, uses traps and a crossbow. You put DoTs on enemies then use a skill that consumes the DoTs to deal heavy damage.

Idk, i love the game and all, just would like a few more classes that had a bit more raw and powerful feel to em.
