Because there is a new event that immediately followed on from it that shares the same fireworks as the summer event as part of it's celebrations (it's why each fireworks display ends with the 'Meteor' logo, it's the symbol of the Rising event). Once the Rising finishes in a few weeks though, then the fireworks will also finish too.

That's what you need for a big party where Yoshi-P tells us how great we are and that we had saved 2 worlds and more after some Fed-Ex quests where you save the happiness of widows and orphans.
To be fair, if you were given a task to deliver thing from point A to point B and then be lauded as a hero, you would take it. lol
Fireworks should just be added in as a random weather event. No reason it should only be once a year. Lots of other reasons to have random celebrations now
