Might only be me but i would love if something like that could be implemented
I find having to manually enter multiple stacks for sale tedious too.
But this "tediousness" isn't unique to the marketboard, it's everywhere in the game.
And with good reason. Everything you want to do in FFXIV, SE puts delays in to slow down how fast you can do it. Delays like making you run around the map, or wait as an animation of an NPC walks away from a conversation.

It's all about keeping you online. A fine balance between the value of the little psychological rewards the game gives and the annoyances you have to overcome to get them.

Also, the need to manually enter each sale:
  • prevents mass accidental sales at the default price -- like listing 300+ Tsai Tou Vounou HW at 40 gil each and closing the sell-item box before you notice, and
  • slows down the people trying to corner the market on something a little.
