We've been getting new DoW/DoM jobs every expansion, but we've kept the same 8 crafters for over 10 years, since 1.0. They've even had an unofficial crafter in the game since at least Heavensward: Stonemason. There's a whole slew of NPC stonemasons tied to the Moogle beast tribe quest, for instance.

It wouldn't even be difficult to manage, a lot of the other crafts use stone in some capacity. I checked, and there are plenty of crafts involving stones and rocks that aren't jewelry, like using marble, granite, whetstones, and some stone ingots.

I saw crafts from crp, bsm, arm, gsm, and alc that could be swapped over, mostly housing items. And all the gsm secondary tools (grind wheels) could also be for this, as well as a number of weapons and tools that could be made out of stone or are already. Additionally, all the 'bone' crafted items seem much more fitting under this new crafter.

Granted, the majority of crafts using these materials are for housing items, but that makes perfect sense.
