If you pick up Botany and Weaver, you can level those together and ultimately be able to fix your own THM gear (robe, pants, hat, etc).

It really depends on what the purpose for your leveling is. If it's for money, you might be better off with something like Mining/Goldsmithing (and you'll get materials for Blacksmith and Armorer as well).

    Do ALL the crafts!

No, seriously. There's quite a bit of overlap between a number of crafts. For instance, many recipes are made out of combinations of wood, metal, cloth, and leather, and even alchemy gets in on the fun with various oils, glues, and other reagents.

Cooking's about the only craft that doesn't get in on the fun, but in a way it helps out ALL the classes by allowing you to make food, and you should be using food near your level if you're actually trying to help out your stats (In most situations, it's even preferable to use food below your level rather than food above it). If you need help with picking the right food to use, I've got a food guide over at GamerEscape you can use to make the math easy.

Another thing to keep in mind is that, moreso than for battle classes, disciplines of hand REALLY benefit from cross class abilities. The right abilities from a variety of classes can allow you to pump up quality very high, for either extra xp or to HQ items.

I'd pick one rather than trying to get multiple ones levelled at the same time. Quicker you get one to fifty, quicker youre using it to make decent gil. Or quicker you have one for hamlet defence.

For some reason, I forgot all about Hamlet Defense. Yes, that is a VERY valid reason to take a single one up to 50. Though, on the other hand, the group I run with asks that you have the crafting abilities that can let you hit 100% progress in 4 moves. And actually, when it comes to money, you need to HQ to make the good money, and there's an array of abilities from different classes you'll want for that.

Needing cross class abilities on crafting jobs to really help you out is why I'd suggest a DoL before a craft. Having said that we I ran hamlet for twelve hours yesterday to take advantage of being in the top 20 provisioners and for part of it one of our crafters only had Cul levelled and still did fine, we were consistently getting 64k.
