The issue with grand companies is that the door is treated "private" which means no one would be able to assist eachother when having low crafters and wanting to aquire something that is too expensive on the market.
You don't need an assistant to use the workshop and who is to say they can't enable multiple people like they do with a workshop at free company? The financial rewards need to be neutered given workshops as they stand now are a big source of income for anyone with access to them if they go to the time to level up subs and airships.
