The reason people always say “play it your way” is because it's true.

There are no hard and fast rules when it comes to leveling. If you want to be as efficient as possible and maximize every bit of exp, go for it. Just because someone else prefers to take it easy on a single job doesn't mean you have to as well.

In terms of effiency it's best to level a dps via MSQ quests while doing the dungeons on either tank or healer as you have lower queue times on them.
Youc an easily level 2 classes without regularly doing extras like roulettes or WT but if you do some extras a bit more regularly (doesn't have to be daily though), you will hit 90 with 3 classes by the end of EW. You also have the benefit of instantly having 2-3 classes (and roles) to choose from for content, depending on what is in highest demand for the content you're doing.
Alli raid has fairly short queue times for DPS, other roulettes favour tanks and especially healer. Any specific duties I recommend healer for better queue times same for playing at odd hours.

So the "just level one class" is nice for people that want to include a bit of RP as it feels more like a consistent concept but if that's no concern for you than I would recommend leveling at least 2 classes. Since you can also pick up some classes at 30/50/60/70, it's fairly easy to get 3 to 90 during MSQ.
I leveled only DRG during MSQ on one character and I can't recommend that if you want to play more efficiently. Duties were always a roadblock outside prime times, I was way overleveled and it just felt wrong and unsatisfying to be close to 60 while not even having my HW skills unlocked as I hadn't reached the area for it yet. Quest rewards were wasted as I already outleveled the armor by a mile.

With that said, people in my FC keep saying I should just level one class, is that right? I’m asking because if I did that i would get my first class to max level while the MSQ is still far from finished, but then I won’t have other classes leveled up high enough to even continue the MSQ. I would have to do run dungeons endlessly just to level up my second/third classes to get them high enough level to meet the MSQ required level.

    Do what's fun to you.

That said, when you get to the higher levels of the MSQ (especially past 80 when extra XP bonuses drop off) you'll find it impossible to keep up all 3 without doing side content as you go. When I'm leveling a new alt, I usually stick to 2 jobs - a DPS for the solo parts and either tank or healer for the instanced content. That gives me enough of a buffer that I usually only need to do hunt bills on the side to get both to level cap right about the time I'm getting to the end of the main MSQ.

Another factor is how much you play daily. The more you play a day, the more side content you'll need to do since you don't get much advantage from the rested XP bonus.

A lot of people have the mindset "Must get to endgame ASAP, go go go skip all the cutscenes never do any optional content ever go go go go go"

... I wonder why this is the MMO they chose.

Because there are still fun things to do even if you don't have an appreciation for the story.

Or because they used to play one of the other MMOs where endgame was "the game" and leveling was just an obstacle in the way. They get brainwashed into thinking that every MMO is designed that way.

There's a persistent bit of misinformation (that I think used to be true, but was changed years ago) that you get more bonus EXP on secondary jobs according to the level of your highest job, in which case getting one to max level would be beneficial. This is not the case, and EXP now simply has a fixed bonus for all jobs that are not your highest-levelled job.

I think the best approach is to keep at least two jobs slightly ahead of MSQ level, but ideally not too far in front. The amount of EXP you get from quests is "worth more" when close to the intended quest level because it fills a bigger percentage of the EXP bar.

I've been personally leveling 2 roles as I work though Main Story 80 to 90, both RDM and WHM. Been working out pretty well and I do all the side quests. There is way too much xp wasted if all you do is level one role.

I think your FC mates are just telling you to main one class.
But if you can play all those classes at the same level, I say level them all.
And I also rotate during MSQ to not waste EXP
But if you raid, you are gonna have to pick a main to gear up.
But that is endgame and should not be a thing during MSQ

It's doable. The MSQ is a lot to take in if you're actually watching cutscenes. Assuming you're doing all your daily roulettes on different classes as you progress you should get a lot of levels on your alt classes. You're not going to hit 90 on all of them at once or anything but it'll help.
