So as the title says, we're able to skip the initial grindy bit if we hand in a Zeta weapon right, so my question is, do we lose access to the replica weapons if we do that?

You can buy a replica for glamour, but make sure you get it BEFORE turning in the real Zeta because you will lose the actual weapon in the process. If I remember correctly there's a quest that has to be done to unlock the replica. Afterward, the replica should always be available for purchase.
Awesome, I was worried I was going to lose access to the replica vendor. Cheers!
Sacrificing your zeta weapon for the Anima weapon is the only way to make the vendor permanently available for that weapon. Normally you need the zeta in your inventory, but after sacrificing it, you can buy the replicas whenever you want. Though you have to sacrifice it, if you just toss the zeta, you lose access to the replicas for it.
