I thought I saw another thread on this very subject, but couldn't find it. Anywho, what are the advantages to off-hand tools for crafters? I've been leveling up Blacksmith using leves, but still can't figure out why I would ever need a file.

To make crafting materia...that's all at the moment.
Well and to boost magic craftsmanship if you don't have enough on main hand.
Certain synths have a different end result using main/off if you manage to HQ the synth.
Example:
HQ'ing Electrum Ingot on main hand would result in an Electrum Ingot +1
HQ'ing Electrum Ingot on off hand would result in 2x Electrum Ingot (NQ)

Ah ok, thank you very much
Guess I'll experiement with my tools as I level.

You can easily look it up, if you go to Eorzeapedia, under your target item it will display the recipe. If there is an off-hand result that is different to mainhand, it will display it in the table when you click the "Show" link next to the title "Detailed Results".
Example:

It has been standardized in all the new recipes.
Main Hand always gives +1.
Off hand always gives additional yield where applicable and +1 if not.
