I've done that, but it was because I got the quest before somebody else and the party leader refused to invite me. He actually accused me of stealing from the party. So before I did it, I told him "You wanna see stealing from a party?" then promptly switched to whm and put myself on follow on the NPC. Guess what happened? I got 500 seals for no work. Had the party leader invited me, I would have helped to earn the full 750 seals.

Please remember folks, caravan escorts are first come first served. Just because you did the last one, that does not guarantee you a spot in the next run, your MUST be faster than the other folks waiting for the quest.
