Do not watch anime anymore, but I still read manga/manhwa and these are my top 5 in order:
1. One Piece-manga
2. ID-manwha
3. 1/2 Prince-manwha
4. Nobelesse-manwha
5. Toriko-manga
Got many others close behind, but I got to say those are my favorite ones.

No but seriously, I have a few, although watching the anime adaption of Valkyria Chronicles pretty much killed my interest in any anime released after it(post-2009).
A few of my highlights would be stuff like Gunslinger Girl, the anime adaption of Gungrave, Rurouni Kenshin, Gundam 08th MS Team, Blue Submarine No.6, Neon Genesis Evangelion, Haibane Renmai, Beck, Nodame Cantabile, the first half of Death Note, Serial Experiments Lain, Record of Lodoss War... I can't really pick any favorites, but these series should give some insight as to the types of anime I'm into.
I generally like period dramas, character-focused and introspective stuff, fantastical stuff, anything music-related.
I usually go for stuff that Madhouse or Production I.G., and try to avoid anything Beetrain does. Of course as I pointed out before, haven't watched anime in a long while.
Also, honorable hate mention. I can't bloody stand anything Ghost in The Shell or Skycrawlers. Anything that up its own ass needs to go away.

Yeah, that's why I like dragonball kai. it's a lot shorter now but they took out all the crap :P
