It doesn't mean anger, it means bitterness and/or resentment.
The term itself isn't being used in a fashion unique to the game though why some NPCs might believe the rock is able to absorb rancor is part of game lore. Within the lore, aether is a part of almost everything and when someone dies their aether disperses to the land to help renew it while their soul awaits rebirth.
In this case, some of the locals believe that the aether tainted by the rancor of the victims was absorbed specifically by the rock when they died. The ending of the quest suggest that it may be no more than superstition, or at least not something that could be proven by what you collect.
